Grocery List:
- Chicken (3 lbs)
- Broccoli (3 large heads)
- Pizza crust (two 13.8 oz cans)
- Sour cream (8 oz container)
- Cream of chicken (10.5 oz can)
- Cream of mushroom (10.5 oz can)
- Butter (8 TBSP = 1 stick)
- Ritz crackers (2 sleeves)
- Seasonings: salt, pepper, garlic powder, onion powder
Directions:
- Dice the chicken into small cubes
- Season and cook the chicken in a large wok
- Remove from heat and mix in the sour cream, cream of mushroom soup, cream of chicken soup
- Pre-heat oven to 400 ºF
- Add one pizza crust to the bottom of a 9×13 baking dish
- Add the chicken mixture on top of the first pizza crust
- Add the second pizza crust on top of the chicken mixture
- Melt one stick of butter in the microwave in a large bowl
- Crush the Ritz crackers into the bowl with melted butter. Mix thoroughly and then add to the top of the second pizza crust
- Bake in the oven at 400 ºF for 15-20 minutes, until pizza crust is cooked and the crackers are golden brown
- While the casserole is baking, cut the broccoli away from the stem
- Add the broccoli along with 1 cup of water to an instant pot and cook on manual high for 1 min. Drain and serve.
