Ritz Casserole

Grocery List:

  • Chicken (3 lbs)
  • Broccoli (3 large heads)
  • Pizza crust (two 13.8 oz cans)
  • Sour cream (8 oz container)
  • Cream of chicken (10.5 oz can)
  • Cream of mushroom (10.5 oz can)
  • Butter (8 TBSP = 1 stick)
  • Ritz crackers (2 sleeves)
  • Seasonings: salt, pepper, garlic powder, onion powder

Directions:

  1. Dice the chicken into small cubes
  2. Season and cook the chicken in a large wok
  3. Remove from heat and mix in the sour cream, cream of mushroom soup, cream of chicken soup
  4. Pre-heat oven to 400 ºF
  5. Add one pizza crust to the bottom of a 9×13 baking dish
  6. Add the chicken mixture on top of the first pizza crust
  7. Add the second pizza crust on top of the chicken mixture
  8. Melt one stick of butter in the microwave in a large bowl
  9. Crush the Ritz crackers into the bowl with melted butter. Mix thoroughly and then add to the top of the second pizza crust
  10. Bake in the oven at 400 ºF for 15-20 minutes, until pizza crust is cooked and the crackers are golden brown
  11. While the casserole is baking, cut the broccoli away from the stem
  12. Add the broccoli along with 1 cup of water to an instant pot and cook on manual high for 1 min. Drain and serve.
