Pasta Salad With Italian Chicken Breast

Grocery List:

  • Tri-colored rotini (two 12 oz packages)
  • Chicken breast (30 oz)
  • Olive oil (2 TBSP)
  • Red onion
  • Cherry tomatoes (one 12 oz container)
  • Cucumber (1)
  • Mozzarella (8 oz)
  • Salami slices (one 6 oz package)
  • Italian dressing (16 oz – I used Kraft brand)
  • Shredded parmesan cheese (one 6 oz package)
  • Seasonings: The Gourmet Collection oregano basil & tomato


  1. Cook pasta according to the directions on the box. Drain and set aside
  2. Pre-heat oven to 400 ºF
  3. Add 2 TBSP olive oil to a large pan/wok and set on high heat
  4. Season chicken breast with The Gourmet Collection oregano basil & tomato
  5. Seer chicken breasts on both side for ~2 mins or until golden brown
  6. Remove the chicken from the pan and place on a baking sheet lined with foil
  7. Cook the chicken at 400 ºF for 8-10 minutes (internal temp of 165 ºF)
  8. Slice chicken and set aside
  9. Finely chop your red onion, cherry tomatoes, and cucumber (I like to use this Brieftons vegetable chopper)
  10. Finely chop your mozzarella and salami
  11. Mix the chopped ingredients with the cooked pasta
  12. Pour the entire bottle of Italian dressing into pasta mixture. Mix thoroughly
  13. Top the pasta salad with the cooked chicken and parmesan cheese
