Grocery List:
- Tri-colored rotini (two 12 oz packages)
- Chicken breast (30 oz)
- Olive oil (2 TBSP)
- Red onion
- Cherry tomatoes (one 12 oz container)
- Cucumber (1)
- Mozzarella (8 oz)
- Salami slices (one 6 oz package)
- Italian dressing (16 oz – I used Kraft brand)
- Shredded parmesan cheese (one 6 oz package)
- Seasonings: The Gourmet Collection oregano basil & tomato
Directions:
- Cook pasta according to the directions on the box. Drain and set aside
- Pre-heat oven to 400 ºF
- Add 2 TBSP olive oil to a large pan/wok and set on high heat
- Season chicken breast with The Gourmet Collection oregano basil & tomato
- Seer chicken breasts on both side for ~2 mins or until golden brown
- Remove the chicken from the pan and place on a baking sheet lined with foil
- Cook the chicken at 400 ºF for 8-10 minutes (internal temp of 165 ºF)
- Slice chicken and set aside
- Finely chop your red onion, cherry tomatoes, and cucumber (I like to use this Brieftons vegetable chopper)
- Finely chop your mozzarella and salami
- Mix the chopped ingredients with the cooked pasta
- Pour the entire bottle of Italian dressing into pasta mixture. Mix thoroughly
- Top the pasta salad with the cooked chicken and parmesan cheese
