Korean beef, rice, and broccoli

Grocery List:

  • Ground beef (2 lbs of 85/15)
  • Jasmine rice (15 servings – I use the big bag from Costco)
  • Frozen broccoli (one 16 oz bag)
  • Sesame oil (4 TBSP – 2 for broccoli, 2 for beef)
  • Minced garlic (2 TBSP – I use the big jar from Costco)
  • Brown sugar (1/2 cup)
  • Soy sauce (1/2 cup)
  • Grated ginger (2 TBSP)
  • Seasonings: Red chili pepper flakes, salt, pepper, Chinese five spice blend (optional), Flavor God siracha (optional), sesame seeds (optional)
  • Green onions (1 stalk)

Directions:

  • Add rice to a rice cooker along with water and set on white rice setting
  • Add 2 TBSP sesame oil to a large pan/wok and turn heat to medium-high
  • Add beef and cook until it’s almost done. One minute before it’s done cooking add the minced garlic.
  • Drain the fat and return to the pan
  • Add brown sugar, soy sauce, grated ginger, salt, pepper, and red chili pepper flakes
  • Cook for an additional minute or two and stir thoroughly. Set aside
  • Add 2 TBSP sesame oil to a large pan/wok and turn heat to medium-high
  • After the oil is heated, add the frozen broccoli
  • Toss the broccoli in the oil and then add seasonings: salt, pepper, Chinese five-spice blend, Flavor God siracha
  • Cook with a lid on the pan/wok until desired tenderness (stir occasionally to avoid burning!)
  • Add your cooked rice to a meal prep container, then add the beef and broccoli
  • Top with sliced green onions and sesame seeds
