Chicken Parm Subs

Grocery List:

  • Chicken (3 lbs)
  • Olive oil (12 TBSP)
  • Flour (2 cups)
  • Eggs (4)
  • Bread crumbs (2 cups)
  • Grated Parmesan (one 6 oz bag)
  • Fresh mozzarella (8 oz)
  • Basil stir-in-paste (4 oz)
  • Two tomato basil marinara sauce (two 25 oz)
  • Sub rolls (6) – [not pictured]

Directions:

  1. Trim the excess fat from your chicken breasts and turn them into chicken cutlets (watch this video)
  2. Preheat oven to 350 ºF
  3. Set up your breading station by adding flour to a large plate, eggs to a large bowl (mix thoroughly to break the yolks), and then bread crumbs and parmesan cheese to another large plate. Bread each chicken cutlet by dipping in flour, egg, and then the breadcrumb mixture.
  4. Add olive oil to a pan. Cook the breaded chicken until golden brown on each side. Transfer to a baking sheet lined with foil
  5. Slice your fresh mozzarella into thin slices
  6. Add basil paste to cooked chicken cutlets, followed by mozzarella. Top with marinara sauce
  7. Bake the chicken parm in the oven at 350 ºF for 7 minutes (until cheese melts)
  8. Assemble subs on the day of eating
  9. Optional: serve with a side salad containing spring green mix, roasted red peppers, blue cheese crumbles, sunflower seed kernels, and Italian dressing
