- Chicken breast (3 lbs)
- Diced tomatoes (two 14.5 oz cans)
- Stuffing mix (one 12 oz package)
- Chicken broth (1 cup)
- Mozzarella cheese (one 8 oz package)
- Seasonings: salt, pepper, basil, oregano
Directions:
- Preheat your oven to 400 ºF
- Dice the chicken breast into 1-inch cubes. Season with salt, pepper, basil, and oregano
- In a large bowl, mix the stuffing mix, diced tomatoes, and chicken broth. The stuffing should be moist
- Spray a 9×13 baking dish with non-stick spray
- Add the raw chicken, followed by the entire package of mozzarella cheese, and then the stuffing mixture
- Bake at 400 ºF for 30 minutes
- Optional: serve with a side salad containing spring green mix, roasted red peppers, blue cheese crumbles, sunflower seed kernels, and Italian dressing
