Chicken Bruschetta Bake

Grocery List:

  • Chicken breast (3 lbs)
  • Diced tomatoes (two 14.5 oz cans)
  • Stuffing mix (one 12 oz package)
  • Chicken broth (1 cup)
  • Mozzarella cheese (one 8 oz package)
  • Seasonings: salt, pepper, basil, oregano

Directions:

  1. Preheat your oven to 400 ºF
  2. Dice the chicken breast into 1-inch cubes. Season with salt, pepper, basil, and oregano
  3. In a large bowl, mix the stuffing mix, diced tomatoes, and chicken broth. The stuffing should be moist
  4. Spray a 9×13 baking dish with non-stick spray
  5. Add the raw chicken, followed by the entire package of mozzarella cheese, and then the stuffing mixture
  6. Bake at 400 ºF for 30 minutes
  7. Optional: serve with a side salad containing spring green mix, roasted red peppers, blue cheese crumbles, sunflower seed kernels, and Italian dressing
