BBQ Chicken Pizza

Grocery List:

  • Chicken breast (25 oz or two large breasts)
  • Olive oil (2 TBSP)
  • Sticky Fingers Carolina sweet BBQ sauce (one 18 oz bottle)
  • Pillsbury Thin Pizza Crust (two 11 oz cans)
  • Red onion (1 medium)
  • Sliced Pepperoncini (one 12 oz jar)
  • Shredded Mozzarella cheese (one 8 oz package)
  • Shredded Colby Jack cheese (one 8 oz package)
  • Seasonings: Flavor God Honey BBQ

Directions:

  • Pre-heat oven to 400 ºF
  • Add 2 TBSP olive oil to a large pan/wok and set to high heat
  • Season the chicken and then sear on both sides until golden brown
  • Add chicken to a small baking tray lined with aluminum foil
  • Cook the chicken breasts for 8-10 minutes at 400 ºF (internal temp of 165 ºF)
  • Let chicken cool and then dice into small pieces
  • Add pizza crust to two baking sheets
  • Bake at 400ºF for 10 minutes
  • While the pizza crust is baking, dice your red onion
  • Remove pizza crust from the oven
  • Top with BBQ sauce, chicken, red onion, pepperoncini, mozzarella cheese, and Colby jack cheese
  • Bake at 400 ºF for an additional 5 minutes or until cheese is melted
