Grocery List:
- Chicken breast (25 oz or two large breasts)
- Olive oil (2 TBSP)
- Sticky Fingers Carolina sweet BBQ sauce (one 18 oz bottle)
- Pillsbury Thin Pizza Crust (two 11 oz cans)
- Red onion (1 medium)
- Sliced Pepperoncini (one 12 oz jar)
- Shredded Mozzarella cheese (one 8 oz package)
- Shredded Colby Jack cheese (one 8 oz package)
- Seasonings: Flavor God Honey BBQ
Directions:
- Pre-heat oven to 400 ºF
- Add 2 TBSP olive oil to a large pan/wok and set to high heat
- Season the chicken and then sear on both sides until golden brown
- Add chicken to a small baking tray lined with aluminum foil
- Cook the chicken breasts for 8-10 minutes at 400 ºF (internal temp of 165 ºF)
- Let chicken cool and then dice into small pieces
- Add pizza crust to two baking sheets
- Bake at 400ºF for 10 minutes
- While the pizza crust is baking, dice your red onion
- Remove pizza crust from the oven
- Top with BBQ sauce, chicken, red onion, pepperoncini, mozzarella cheese, and Colby jack cheese
- Bake at 400 ºF for an additional 5 minutes or until cheese is melted
