Grocery List:
- Ground beef (2 lbs of 80/20)
- Hawaiian rolls (two packages of 12 rolls, 24 total)
- Shredded mozzarella (one 8 oz package)
- Pepper jack cheese (5 slices)
- Mayo (one 15 oz container – only need 8.5 TBSP)
- Butter spray (one 8 oz container)
- Sweet potato (3 lbs)
- Frozen broccoli (two 16 oz bags)
- Seasonings: salt, pepper, garlic powder, onion powder, Memphis rendezvous seasoning, kickin’ chicken (gourmet collection), parsley
Directions:
- Season ground beef with all seasonings (except parsley) and cook on the stove top. Drain & set aside
- Pre-heat oven to 350 ºF
- Cut Hawaiian rolls in half
- Add bottom half of rolls to a baking sheet sprayed with non-stick spray
- Spray the bottom half of rolls with the butter spray and add mayo (I used 8.5 TBSP)
- Add mozzarella on top of the mayo (I used 6 servings of cheese)
- Add cooked ground beef
- Break pepper jack slices into quarters (small squares) and top the ground beef
- Add the top of the rolls
- Spray with butter spray
- Garnish with parsley
- Cook in the oven for 15-20 minutes
- Turn oven from 350 ºF to 450 ºF
- Cut sweet potatoes into fries.
- Spray a baking sheet lined with foil with non-stick spray. Add sweet potato fries
- Cook sweet potato fries at 450 ºF for 25 minutes
- When you go to eat the meal, re-heat the sweet potato fries and also cook the frozen broccoli in an air fryer (400 ºF for 10 minutes, flip both broccoli and fries at 5 minutes)
