Grocery List:
- Italian sausage (10 – I bought 5 mild & 5 sweet)
- Maple bacon (one 12 oz package)
- Bell peppers (4, one of each color)
- Onion (1)
- Sweet potato (3 lbs)
- Olive oil (1.5 TBSP)
- Black beans (one 16 oz bag)
- Uncle Ben’s Ready Rice wild rice (two 9 oz packages)
- Seasonings: cinnamon, cumin, chili powder, salt
Directions:
- Microwave each ready rice packet for 90 seconds (be sure to cut the top slightly for a vent). Set aside
- Add dry black beans (3 cups) to an instant pot along with water (7 cups) and salt
- Cook the black beans on high pressure for 30 minutes. Allow the pressure to release over 20 minutes and then manually release the pressure. Drain and set aside
- Preheat the oven to 425 ºF
- Cut the sweet potatoes into tiny cubes. Add them to a large bowl and toss them with olive oil and seasonings
- Add the sweet potatoes to a large baking sheet lined with foil
- Bake the sweet potatoes at 425 ºF for 30 minutes
- Cut the bacon into 1-inch strips
- Cook the bacon in a large wok/pan until the desired level of crisp
- Remove the bacon from the pan but save the grease in the pan
- Dice your peppers and then cook them in the bacon grease
- Remove the peppers and save the remaining grease in the pan
- Remove your sausages from the casings and form them into small meatballs
- Cook the sausage pieces in the bacon/pepper grease
- Add the sweet potatoes, wild rice, and beans to a meal prep container
- Top with bacon, sausage, and peppers
