Air Fryer Pork Bites & Loaded Baby Potatoes

Grocery List:

  • Pork loin (4.8 lbs)
  • Canola oil (3 TBSP)
  • Green beans (two 12 oz bags)
  • Olive oil (2 TBSP)
  • Lemon juice (3 TBSP)
  • Bacon (one 16 oz package)
  • Baby potatoes (3 lbs)
  • Shredded cheddar (8 oz package)
  • Sour cream (8 oz container)
  • Green onion
  • Seasonings: brown sugar (3 TBSP), salt, pepper, garlic, Flavor God lemon pepper

Directions:

  1. Add water to a large pot. Bring to a boil
  2. Add the baby potatoes to the pot. Boil for ~8 minutes (until a fork can easily slide into them)
  3. Once they are done cooking, drain and set aside
  4. Cut your pork loin into 1-inch cubes
  5. Add the cubed pork to a large bowl along with canola oil, brown sugar, salt, and pepper. Mix thoroughly and let marinade for ~1 hour
  6. Preheat your oven to 425 ºF
  7. To a baking sheet lined with foil, add your green beans.
  8. Add olive oil, lemon juice, salt, pepper, garlic powder, and Flavor God lemon pepper seasoning. Mix thoroughly to coat the green beans.
  9. Cook the green beans at 425 ºF for 25 minutes
  10. While the green beans are cooking, dice your boiled baby potatoes in half
  11. Add them to a baking sheet lined with foil. Season with salt, pepper, and garlic powder
  12. Once the green beans are done cooking, add the potatoes to the oven. Cook them at 425 ºF for 25 minutes and then broil on high for 3-5 minutes (check every minute or so to ensure you don’t burn them!)
  13. Add the pork cubes to your air fryer basket. Cook at 400 ºF for 9 minutes, flip the pork and cook for another 9 minutes at 400 ºF (note: I had to do this in two batches. Only add enough pork to line the bottom of the basket)
  14. Dice your bacon into small pieces. Cook in a large wok/pan until desired tenderness
  15. Add your air fryer pork bites, green beans, and potatoes to a meal prep container
  16. Top the potatoes with sour cream, bacon, shredded cheese, and green onion
